* 2 c. Minute® Brown Rice, uncooked * 1 lb. pork tenderloin, thinly sliced * 1/4 c. orange marmalade * 1/4 c. horseradish sauce * 1 envelope Italian salad dressing and recipe mix * 2 tsp. canola oil * 2 c. snow peas, trimmed * 1 red bell pepper, seeded and sliced into thin strips * 2 green onions, thinly sliced
What to do:
1. Prepare rice according to pkg. directions. 2. Place pork in large bowl. Add orange marmalade, horseradish sauce and dressing mix; toss to coat. 3. Heat oil in large nonstick skillet on medium-high heat. Add pork mixture; cook and stir 10 to 15 min. or until pork is evenly browned. Reduce heat to medium-low. 4. Add snow peas and red bell pepper; mix lightly. Cover; cook an additional 5 to 7 min. or until peas are crisp-tender, stirring occasionally. Stir in green onions. Serve over hot rice.
