+ 2 c. potato starch (also known as potato flour) + 1 c. tapioca flour What to do:
1. Combine and use cup for cup in recipes calling for flour.

You may purchase a pre-made blend or mix your own with the rice flour, potato starch, tapioca flour or other gluten free flours such as sorghum or corn flours. This recipe is almost right. Potato starch and potato flour are entirely different baking products wwith entirely different results. The recipe should read potato starch or potato starch flour, not potato flour. I found this out the hard way.
