What you need:

+ 6 c. brown or white rice flour
+ 2 c. potato starch (also known as potato flour)
+ 1 c. tapioca flour
What to do:
1. Combine and use cup for cup in recipes calling for flour.
Many gluten-free recipes call for a gluten-free flour blend. You may purchase a pre-made blend or mix your own with the rice flour, potato starch, tapioca flour or other gluten free flours such as sorghum or corn flours.
