* 2 lb. red potatoes, cooked, peeled and cubed (about 6 c.)
* 4-6 hard-cooked eggs, chopped
* 1-1/4 to 1-1/2 c. reduced fat mayonnaise
* 1/2 c. sweet or dill pickle relish
* 1 Tbsp. prepared mustard
* 1-2 Tbsp. dried minced onion
* 1/4 tsp. salt
* 1/4 tsp. pepper
1. Place potatoes and eggs in a large bowl. In a separate small bowl combine mayonnaise, pickle relish, mustard, onion, salt and pepper; mix to combine.
2. Add mayonnaise mixture to potatoes and eggs and stir to mix. Garnish with reserved hard-cooked egg slices or pickle slices.
